Boneless Tofu Buffalo Wings with Homemade Tortillas and Blue Cheese Dressing
Mark has been very supportive of these no-meat meals. Infact, he told me the other day that he had a hamburger for lunch and it made him feel sick. That just made my day 🙂 He does miss one thing, however. Boneless buffalo wings. And although I still have frozen chicken in my freezer, I just don’t really feel like cooking it. And it’s not so much that it grosses me out, it’s mostly laziness. Well, I think it’s both. Anyways, I decided to try boneless tofu wings, since everything else I have made with tofu was a success.
These turned out surprisingly good! If it wasn’t for the texture of the tofu you would think you were eating real chicken. But the thinner you cut the tofu the better texture you will get. I also think fried zucchini with buffalo sauce in a taco would be awesome. I am definitively trying that next time.
Of course you can also use real chicken in place for the tofu. But honestly, I always hated trimming the fat off the chicken, cutting it into small pieces, and waiting for it to cook throughly…using tofu is much, much easier and ALMOST as good.
Tofu Buffalo Ingredients:
- Extra firm tofu, cut in thin strips
- 1/2 c. flour to coat tofu
- 1 egg
- Panko bread crumbs
- Canola oil
- Buffalo hot sauce (Louisiana Hot)
- Cover tofu in flour
- Then cover with egg
- Finish with panko bread crumbs
- Fry tofu until golden brown on both sides
- Cover with Buffalo sauce, but only RIGHT before eating (or the breading will get soggy).
Blue Cheese Dressing Ingredients: (You can also use Ranch dressing)
- 1/3 c. Sour cream
- 2 tbsp Mayo
- 1/4 c. blue cheese
- Salt + pepper
- 1 grated garlic
- 1 tsp vinegar
Blue Cheese Directions:
- Mix all together. Done.
Flour Tortillas Recipes (makes 8 small tortillas–you may want to double)
- 1 1/3 c. Flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp oil
- 2 tbsp soft butter
- 1/2 c. warm water
- Mix dry ingredients
- Add wet ingredients
- Knead until soft
- Cover and let rest for about 30 mins
- Divide into golf-size balls and roll out
- Heat in hot skillet.
If you don’t have a rolling pin, you can still make tortillas. Place a ball of dough between 2 pieces of parchment or wax paper. Get something circular and flat (like a pan), place on top of dough and press down. or you can always roll it with a drinking glass (my method all those times I didn’t have a rolling pin).
